Barbecue is part of our Texas heritage and we take it seriously.

It all starts with the cow, and since this is cattle country, we make a pretty good cow. We start with a small calf, and add some grass, water, and grain. Then we add smoke -- lots of smoke.

Everybody has a different idea about what makes good barbecue, but it's a harmless argument, since there's really no such thing as bad barbecue.
